There is a a lot of difference between tree ripened apricots and what you get in the grocery store. Most commerical orchards have to pick the fruit before it fully ripens which makes it very firm for shipping. The problem is that you loose a lot of taste by picking too early.

Apricot Trees really put on a show at bloom time. Then when the fruit ripen the real pleasure starts when you bite into a tree ripened apricot.
